You are what you eat! Kale is not just window dressing for the red meats at your local grocer. It's loaded with Vitamin K (a single 3.5 oz serving of raw kale delivers a whopping 671% of your daily recommended intake of said vitamin (source: Wikipedia)). It's also a superfood, super rich in Vitamin C, Vitamin A, as well as lutein and zeaxanthin (the latter two being the carotenoids needed to keep your eyes healthy). I may turn up my nose at other members of the brassica family, but kale gets my thumbs up.

Kale is also super easy to grow. Ours flourish all year long; winter's frost even adds a touch of sweetness.
